There’s something about spring that inspires fresh starts and new beginnings. Maybe it’s the blossoming flowers, the melting frost, or just the crisp, warming air that beckons us to enjoy the great outdoors once again. It’s also a time when some of our favorite fruits and veggies come into season, inspiring a whole host of easy-to-make, deliciously good (and good for you) spring salads.

Modern Mediterranean Salad
Pair with Sutter Home Sauvignon Blanc
Dressing Ingredients:
- 2 tablespoons olive oil
- 1/4 cup fresh-squeezed lemon juice
- 2 tablespoons water
- 2 tablespoons red wine vinegar
- 2 tablespoons fresh chopped parsley
- 2 teaspoons dried basil
- 2 teaspoons garlic, minced
- 1 teaspoon dried oregano
- Salt and pepper, to taste
Salad Ingredients:
- 4 skinless, boneless chicken breasts
- 4 cups romaine lettuce
- 1 large cucumber, diced
- 2 cups of cherry tomatoes, sliced
- 1 red onion, sliced
- 1 avocado, sliced
- 1/2 cup pitted Kalamata olives
- Feta cheese crumbles
Directions:
Combine dressing ingredients in a bowl and whisk together until blended. Pour about half of the mixture into a baking dish for marinade. Refrigerate the remaining dressing for the salad.
Add the chicken to the dish and marinate for 15-20 minutes. While the chicken is marinating, combine lettuce, cucumber, tomatoes, onion, avocado, and olives in a large salad bowl. Once marinating is complete, add 1 tablespoon oil to a grill pan or skillet. Cook the chicken over medium-high heat until browned. When done, slice chicken and add to salad. Add desired feta cheese crumbles and serve with remaining dressing.
Very Berry Salad
Pair with Sutter Home White Zinfandel
Salad Ingredients:
- 10-12 cups baby spinach leaves
- 1/2 cup strawberries, sliced
- 1/2 cup blueberries
- 1/2 cup raspberries
- 1/2 cup blackberries
- 1/2 red onion, diced
- 1 apple of your choice, chopped
- Feta cheese
- Crumbled pecans
Poppy Seed Dressing Ingredients:
- 1/2 cup extra virgin olive oil
- 1/4 cup red wine vinegar
- 1/4 cup sugar
- 1 teaspoon poppy seeds
- 1 teaspoon dried mustard
- 1 teaspoon salt
Directions:
To make the dressing, combine all ingredients in a bowl and whisk together until blended. Let sit for half an hour. For the salad, combine all ingredients in a large salad bowl. Garnish with desired amount of feta cheese and crumbled pecans.
