Ingredients
Kofta Burgers:
2 Pounds Ground Chuck
2 Teaspoon Sea Salt
4 Cloves Of Garlic
1 Small White Onion, Grated Or Minced Finely
1/3 Cup Flat-?Leaf Parsley, De-?Stemmed
1 Tablespoon Coriander
1 Tablespoon Cumin
1 Teaspoon Allspice
½ Teaspoon Cinnamon
½ Teaspoon Cayenne Pepper
½ Teaspoon Freshly Ground Black Pepper
Garlic Yogurt Sauce:
1 Cup Plain Yogurt
1½ Teaspoon Garlic, Minced
2 Tablespoons Flat-?Leaf Parsley, Chopped Very Fine
1 Tablespoon Olive Oil
½ Tablespoon Lemon Juice
6 Slices Of Halloumi Cheese
1 Tablespoon Olive Oil
2 Tablespoons Honey
6 Pieces Thick Pita Bread Or Classic Hamburger Buns
Instructions
Garlic Yogurt Sauce:
Mix all ingredients well in a bowl. This sauce can be made ahead and set aside.
Kofta Burgers: Preheat grill to high heat.
In a food processor, process onion, garlic, and parsley very fine—until a paste.
Next, add spices, salt, pepper, and beef. Process this very well, until the beef mixture is a very fine texture.
Form beef mixture into 6 patties, and refrigerate until time to grill.
Brush grill with oil. Grill approximately 2 minutes per side and then move to lower heat area of grill. Grill 2-?3 more minutes total for medium-?rare, and 5-?6 minutes for well-?done.
In the last minute of cooking, place the halloumi in the hot area of the grill. This part will go quickly— the cheese should be ready in less than a minute. Do about 30 seconds a side, or until cheese is charred and melty.
To arrange burgers, spread 1-?2 tablespoons of yogurt-garlic sauce on pita or both sides of hamburger bread. Then place the halloumi, and drizzled approximately 1 Teaspoon of honey over that. Finish with the kofta burger, and more garlic-?yogurt sauce if desired.
